Sweet Chili Glazed Salmon

1 whole filet Atlantic salmon

JT's GSP Seasoning

Louisiana love seasoning

Panda express sweet chili sauce

Soy Sauce

Siracha sauce


Remove skin from salmon with filet knife.(optional) Coat salmon filet generously on both sides with JT's GSP & Louisiana Love. Cook in pellet smoker at 250 degrees until internal temp is 135. Increase temp to 400 degrees. In a bowl mix together 3 parts sweet chili sauce to 1 part soy sauce and 1 part siracha. Coat salmon with the glaze using a silicone brush. Cook until at a minimum of 145 degrees in the thickest part of the salmon and the glaze is set.(about 15 minutes at 400) Remove from grill and allow to rest 5 minutes then slice in and enjoy!

12-16oz Atlantic salmon 

Half yellow onion - minced

4-5 cloves garlic - minced

2 Tbsp fresh parsley chopped

2 Tbsp butter

Blackened seasoning or old bay

1 lb pasta of your choice

16 oz half & half

2 cups baby spinach

1 1/4 cup Italian blend cheese

JT's BBQ G.S.P. Rub

1 lemon


Dice salmon into 1x1 inch cubes and season with Blackened seasoning or old bay. Get large pot on medium-high heat with enough salted water to boil the pasta(follow instructions to cook pasta) Add 2 tbsp. of salted butter to large 12" skillet on medium high heat and then add salmon. Sear salmon for 5-7 minutes tossing and turning to get even browning on all sides and until the internal temp reaches 165. Remove salmon and add onions and garlic to the leftover butter in pan. Sautee onions and garlic for 5 minutes on medium heat until translucent. Add 2 cups half & half with onions & garlic and reduce heat to medium. Add 2 cups baby spinach and cover with lid for 5 minutes or until spinach is soft and cooked. Reduce heat to low & add 1.25 cups Italian blend cheese one handful at a time while stirring until sauce thickens. Add 2 tbsp. chopped parsley and stir. Season to taste with blackened seasoning or GSP. Add 3/4 of boiled pasta to sauce and mix together, add salmon back to skillet then cut lemon in half  squeeze onto salmon enjoy!
