Breakfast casserole!

Ingredients:
12 eggs
1 lb breakfast sausage
2 cups shredded cheddar cheese
28 oz frozen diced potatoes
1 small yellow onion
1/2 cup whole milk
JT's BBQ GSP Rub
Vegetable oil
Cooking Instructions:
Get 12 inch cast iron skillet heating on medium-high heat add 1-2 tbsp vegetable oil and then add 28oz frozen diced potatoes. Season potatoes with GSP or salt & pepper to taste. Brown potatoes 10-15 minutes stirring often until browned on all sides and cooked thoroughly. Put potatoes in half size aluminum pan and add 1 yellow onion minced and 1 lb breakfast sausage to skillet. Season onions & meat with GSP or salt & pepper to taste. Cook onions and sausage until cooked thoroughly then add sausage & onions to aluminum pan. Crack 12 eggs into bowl and add 1/2 cup whole milk & whisk until combined thoroughly. Add 1-2 cups shredded cheddar cheese on top of potato/meat & onion mixture and then add eggs into pan and bake uncovered at 375 degrees for 30 minutes. Cover with aluminum foil and cook an additional 30-40 minutes until eggs are set and cooked thoroughly.
