Time: 1 hr. 20 minutes
Ingredients:
*One rotisserie chicken - deboned
*24 oz. andouille sausage - sliced
*JT's GSP Seasoning to taste
*Two cups of diced green onions
*2-3 yellow onions - diced
*Three bell peppers - diced
*One entire bunch of celery - sliced
*2-3 tsp minced garlic
*12 cups chicken stock
*Cajun seasoning - to taste
*Crushed red pepper - to taste
*Black pepper - to taste
Instructions: Start by deboning your chicken and slice sausage, set aside. In large pot on medium-high heat add 1 stick of salted butter and all of your diced vegetables, Sautee vegetables for 5-10 minutes and then add your entire jar of roux. Stir the vegetables and roux together until the roux has dissolved. Slowly add 12 cups of chicken stock while stirring. Next add your deboned chicken and sliced andouille sausage to the pot. Add 2 cups of sliced green onions and stir. Season to taste with Cajun seasoning, GSP, Black pepper and Crushed red pepper. Now last but not least its time to add the 1 pound of frozen cut okra and 1-3 tbsp. of gumbo file. Turn on low heat and simmer for 10-15 minutes. Optionally you can serve gumbo with rice and potato salad. Grab and bowl and call your friends and family to eat, your done!
